Colony Bakery’s gourmet roasts arrive pre-orchestrated for fuss-free hosting: Wagyu Beef Tenderloin Wellington ($538), Roasted Rib-Eye ($438), Roasted Turkey ($338), and Glazed Gammon Ham ($268), each with the proper trimmings so you can spend less time carving out a plan and more time carving the joint.
The patisserie work is equally assured; intricately moulded chocolate Christmas trees, a trio of seasonal tartlets (chocolate gingerbread & orange confit; lemon white chocolate; chestnut vanilla), and a matcha-chocolate-cranberry Christmas wreath brioche that tastes like a carol in pastry form.

Prefer your celebrations plated and performed? Colony’s seven live conservatory kitchens stage the season with slow-roasted turkey, beef tomahawk and marmalade-glazed gammon ham threaded through Thanksgiving (27 November 2025), Christmas Eve and Day, New Year’s Eve and Day services.
Expect Champagne brunches (from $268 on Christmas Eve and New Year’s Day; $338 on Christmas Day), seafood suppers (from $283 on Christmas Eve), and dinners with free-flow pours at select seatings.

Across the lobby, Republic keeps things gleaming under its mother-of-pearl skylight. The Festive Afternoon Tea (1 November 2025 – 4 January 2026, from $78 per person) balances sweet with savoury. After dark, the bar team shakes up a quartet of seasonal cocktails.

Then there’s the hotel’s big crescendo: the Christmas Brunch Extravaganza at the Grand Ballroom. Live carving stations parade Glazed Gammon Ham, Beef Prime Rib and Roasted Turkey; counters brim with à la minute pasta, sushi, sashimi and desserts.
