An Ode to Singapore: 165 Sky Dining Launches Singapore-Inspired Culinary Experience for SG60

Singaporeans love their food. Whether it’s a bowl of steaming laksa or a nostalgic bite of ondeh ondeh, nothing tugs at the heartstrings quite like local flavours. That’s what ‘An Ode to Singapore’ is trying to capture.


Now imagine enjoying these very dishes, not at a bustling hawker centre, but 165 metres above the Marina Bay skyline, as the city unfurls in a glittering panorama beneath you.

Welcome to ‘An Ode to Singapore’, the latest gastronomic experience from 165 Sky Dining by Singapore Flyer. Launched to mark Singapore’s 60th year of independence, this sky-high celebration takes diners on a revolving 90-minute journey through the flavours that define our island city.

The View May Be Familiar, But the Flavours Are Far From It

Curated by Chef Wyvin Yap, the five-course menu is a love letter to Singaporean heritage. Take the opening act: a Deconstructed Laksa Boston Lobster. This isn’t your kopitiam bowl of noodles. Here, laksa leaf ash, fresh coconut cream, grilled pineapple, sago pearls, and chilli olive oil converge in an East-meets-West ensemble that’s as dramatic as the view outside your capsule.

And the surprises don’t end there. A chilled Sambal Salad brings a refreshing twist with Japanese bean curd, while a comforting chicken-based Bak Kut Teh gets a European nod through seafood tortellini.

Choices at 165 Metres: Pandan or Prawns?

For the main course, guests face a tantalising dilemma. Do you go for the Pandan Chilean Seabass, nestled in pandan leaves and drizzled with kecap manis for a fragrant, caramel-like finish? Or indulge in the Wagyu Sirloin Steak, laced with har cheong butter?

Then comes dessert, a gentle landing in the form of Ondeh Ondeh Cake, delicately plated and served with petit fours by none other than Singapore’s own Janice Wong. The evening wraps up with a complimentary glass of Singapore Sling (or champagne, if you’re dining on peak nights), alongside a limited-edition Singapore Flyer souvenir.
